Easter Cupcake Wars

Being inspired after watching a gripping episode of "Cupcake Wars" over on the Food Network one evening, I promptly set to baking my own batch of cupcakes the very next day.

Rather than an obscure "games night" challenge the contestants were set whereby they used a concoction of salty pretzels, cream cheese, popcorn and other typical USA Rose Bowl fodder, I wanted to create a batch of simple, elegant creamy lemon cupcakes.  And if really bold, I was going to pipe them too.

Little did I know, this little venture would lead to my own "Cupcake War"...

The error in my ways started by NOT following the usual tried and tested recipe of Delia's - the all-in-one-cake recipe. Yes, you may slowly realise I am quite a Delia fan...
I decided, for whatever obscure reason, I was going to use Granny's Gems recipe instead, which I had not used since my school baking days... a long time. And I was going to simply add lemon zest and juice to the recipe, as Delia suggests.

Now my eyes unfortunately are less "sharp" these days, plus I was in a rush, so I totally mis-read 2 eggs and not the required 3 to help these little gems rise with pride...

For the first time EVER the little gems, Granny's little gems all failed to rise, but SANK in the middle.
Now these would (under normal circumstances) make perfect lunch box treats : lemon cupcakes. And Further, as a parent, you have peace of mind as you know exactly what's in them.

I must insist however -they still tasted delicious, but you just had to eat them with closed eyes.
